Tennessee State University (TSU), a leading Tennessee Board of Regents institution and an AA/EEO employer, is now accepting applications for two fully funded Graduate Research Assistantships in the Department of Food and Animal Sciences for Fall 2026. These positions are ideal for highly motivated students pursuing a Master of Science (MS) degree and passionate about food science, animal science, meat safety, and agricultural research.
Selected candidates will join the research program of Dr. Siyuan “Steven” Sheng, Ph.D., whose work spans crucial areas in food safety, meat quality improvement, and workforce development within the agricultural sector.
Research Areas for Graduate Research Assistantships at Tennessee State University
Graduate Research Assistants will engage in a diverse portfolio of projects, including:
1. Chemical Safety in Meat Products
Investigate chemical contaminants formed during manufacturing, processing, and storage to safeguard consumer health and improve regulatory strategies in the food industry.
2. Meat Quality Enhancement
Explore ways to improve fresh and processed meat quality traits, including color, texture, water-holding capacity, and nutritional factors.
3. Sensory Science & Consumer Evaluation
Design and conduct sensory panel studies, analyze consumer preferences, and interpret results to guide product development.
4. Industry Applications & Workforce Development
Extend research to practical industry applications such as automation, labor training, and meat science extension education, preparing students for competitive careers in food processing and agriculture.
Research Locations

University of Wisconsin–Madison Meat Processing Lab: Initial research phases, providing access to advanced equipment and nationally recognized facilities.

Tennessee State University’s Food and Animal Sciences Building: From December 2026, all research will transition to TSU’s state-of-the-art facility.
